You can set workshops, courses, events, regular classes, and tours to private, meaning only one booking is allowed per time slot, regardless of the number of participants.

1. Go to Settings>Workshops
2. Click on the workshop
3. Go to the Schedule tab
4. Tick the checkbox [1] in the Private section.
